ELIANNE HASSON - GRANDMA'S BEEFBURGERS (ALGERIAN RECIPE)

Ingredients:

Burgers: 600g of fresh ground neck meat (preferably ground in a meat grinder)
1 medium-sized crushed potato
1 crushed onion
a handful of thinly chopped parsley
3 spoons of water
a bit of oil
salt
saffron
black pepper
nutmeg
a spoon of rice soaked for about three hours

To fry the burgers:
a plate of semolina flour
eggs

Chicken parts (no matter which)
onion
celery head
three carrots
soybeans (put in boiling water for several minutes and then take out)
olive oil

Preparation:

Burgers: Place all burger ingredients in a bowl and knead thoroughly so that air can come in. Heat oil in a pan to high heat. Dip the burgers first in the semolina and then in the egg and fry for a long time. Remove the burgers and place them in a dish.

Chicken: Put a bit of olive oil in a deep and flat pan (preferably heavy). Lay the chicken parts and fry for several minutes until the chicken "closes". Add the onion and the same spices used for the burgers (salt, black pepper, nutmeg and saffron). After several minutes add the celery root and carrots. After a bit of frying cover the pan to allow the vegetables to steam. When they have steamed, add the soybeans. Lay the fried burgers on top, cover, lower the fire and let the burgers cook over the steams for about 45-60 more minutes.

Serve with either couscous or rice.
